Substituting different ingredients for the use of eggs in any dish, is not uncommon. Vegans are firm users of egg substitutes, with a long list of others right behind them. Some people just do not like the taste of an actual egg and just prefer to use a substitute while; others are following a strict dietary plan and egg substitutes fit in their plan better than a fresh egg. Some homemade egg substitutes contain less calories than a fresh shell egg.
Eggs are also a perishable food just like raw meat, fish and milk. This can become very costly and also enhances your chances of catching a food borne illness. While that chance is slim in eggs, the possibility is still there.
Pending the reason and type of meal or dish you may be preparing, there are various substitutes that may be available. Some substitutes are gathered from history and household groceries while others, are strictly processed in a plant with artificial flavors and dyes.
Many people can never tell the difference in whether a real shell egg or an egg substitute was used in a recipe. You can use a ready made substitute for eggs or a homemade version for all types of cooking and baking.
Here is a simple recipe for a homemade version of a substitute for eggs:
2 large egg whites, lightly beaten
1 tablespoon nonfat dry milk powder
1 teaspoon canola oil
4 drops yellow food coloring, optional
Yields ¼ cup of substitute equal to 1 large egg, 1 serving.
In a small bowl, lightly beat your egg whites, powder milk and oil together. Add food coloring if desired. This creates your substitute for eggs.
Other household items that may be able to serve as a substitution for eggs in some recipes are (EQUALS 1 EGG):
2 tablespoons of corn starch
2 tablespoons of potato starch
1 tablespoon soy milk powder + 1 tablespoon cornstarch + 2 tablespoon water
If your eggs are being used strictly as a binder, you can se these substitutes:
(FOR ONE EGG)
½ of a medium banana, mashed
¼ of a cup of applesauce or other pureed fruit
Any manufactured egg replacement sold at your local grocer
These will allow you to bind your other ingredients together when preparing. Such recipes may be: drop cookies and some homemade breads. This will not take away nor add anything unexpected to the flavor of your creation.
When your goal is to avoid the use of eggs in a recipe, you need to be sure of the purpose of the egg use in that particular recipe. For example, when baking a cake like and angel food cake, an egg free recipe does not typically turn out well. It may be best to do some more research and find another egg free friendly recipe or one that uses less eggs for binding or leavening.
There are many different variations and combinations that will give you the affect of using eggs in many recipes. Substitute for eggs can not only be used to mix into a recipe but some can used to whip up some good ole’ fashioned scrambled eggs for breakfast.
